Danish Whisky Manifesto Sets Clear Rules for Authenticity and Origin

Ten distilleries across Denmark have signed the Danish Whisky Manifesto – a new document aimed at defining and protecting the authenticity of Danish whisky. Inspired by the 2004 Nordic Kitchen Manifesto, the initiative seeks to establish a strong identity and pave the way for protected geographical indication (GI) status.

Production Standards and Certification Rules

To qualify for the ‘Authentic Danish Whisky’ label, producers must meet these conditions:

  • Mashing, fermentation, and distillation must take place in Denmark.

  • The whisky must age at least three years on Danish soil.

  • Danish grains must be used; otherwise, origin must be disclosed.

  • Additives like flavorings, coloring agents, or sweeteners are prohibited.

  • A wide range of grains and equipment are allowed.

As of 2030, all cereals must be 100% certified Danish in origin.

Support from Industry Leaders and Government

Tourism Minister Morten Dahlin welcomed the manifesto, noting its importance in telling Denmark’s story through food and drink. Jakob Stjernholm, managing director at Thy Whisky and chair of the group, called the manifesto both a symbol of authenticity and a driver of innovation.

Linking Whisky to Local Land and Values

For Stjernholm, the manifesto reinforces the connection between Danish whisky and Danish agriculture. “Origin, transparency, and sustainability are becoming more important. We want Danish whisky to lead this global shift,” he emphasized.

Aiming for GI Status and Tourism Growth

Inspired by recent GI success stories, like Welsh single malt, Danish producers hope the manifesto will help secure global recognition. This would enhance Denmark’s tourism offering and promote the country as a unique whisky destination.
